Peppermint Chocolate Cake Mix Cookies

Did you just read what these cookies are called? YUM!

Glenn has a work Christmas lunch in for his company today, and he needed to bring a treat to share. So last night we made our own little twist on Cake Mix cookies. This is a quick and easy recipe to throw together if you are needing to bring something to share.

Here is the recipe:

  • 1 box Chocolate Cake Mix 
  • 2 Eggs 
  • 1/2 cup Oil 
  • 1/2 tsp Peppermint Extract 
  • 1/2-1 cup Chocolate or White Chocolate Chips (Optional) 
  • Crushed up Candy Canes
Mix the Chocolate Cake Mix, Eggs, and Oil in a bowl. Stir in the Peppermint Extract and Chocolate Chips. Roll into little balls and roll in crushed up Candy Canes (I just rolled the top). Place on ungreased (I use a silicone baking liner) cookie sheet.
Bake at 350 degrees for 8-10 minutes. Let cool on pan before transferring to a cooling rack or plate.
