I love chicken salad. It makes for an easy dinner and then easy lunches during the week. This is a recipe from Our Best Bites that I tweaked to just how I like it.
Makes 4-8 servings--depending on your definition of serving.
4 C. shredded chicken
1 red bell pepper diced
1/4 C sliced green onion
2 medium sized apples diced
1/2 C light mayonnaise
1/2 C sour cream or Greek yogurt
1 TBS fresh parsley or cilantro (I use dry usually)
1 1/2 tsp curry powder
1 tsp red wine vinegar
1/2 C sliced almonds
In a large bowl, combine all ingredients except almonds and stir to combine.
If possible, chill for 1 hour before eating. Can be made a head and used during the week. Before serving, mix in almonds. Eat in a lettuce wrap, pita, bread, or a wrap.
